Recently A Table In Time purchased a share of a bison bought at January’s stock show. Specifically Slow Food Denver gathered investors ahead of the show and then, on our behalf, participated in “The National Gold Trophy Bison Carcass Auction”.

We had requested a Heifer (versus the larger Bull). Costs ranged from $400-$700 per carcass, not known until the day of the auction. Each carcass would be divided into eight equal “shares” representing 50% ground meat, 20% steaks and 30% roasts. Slow Food Denver hoped to pay a fair price, one that benefited the rancher as much as the consumer.

Who can pass up the chance to purchase meat directly from a Coloradan rancher? This opportunity is worth every penny! It feels satisfying to cook with quality ingredients that not only offer a stunning taste but are also sourced almost right in your own back yard!! Even better…ranchers receive a solid return on their investment. Yesterday we picked up our bison delivery. Yahoo! Thank you to Andrew Nowak of Slow Food for coordinating this huge endeavor from start to finish. Here are the impressive “stats” of our carcass:

  • 485 lbs
  • $6.75 Hanging Weight
  • “Tied for 3rd highest in class for tender score”
  • Grass-fed for entire life
  • From Big E Game Ranch, Evergreen, Colorado
